MAKES 8 CUBES
15g (1/2 oz) unsalted butter
40g (1 1/2 oz) onion chopped
100g (4 oz) chicken breast, chopped
300g (11 oz) carrots, peeled and chopped
1/2 dessert apple, peeled and chopped
200ml (7 floz) unsalted chicken stock
1 bay leaf
1. Heat the butter in a saucepan, add the onion and saute for 2-3 mins.
2. add chicken and saute for a couple of mins until it turns opaque.
3. add carrots and apple and pour over the stock and add the bay leaf.
4. Bring to boil and then cover with a lid, reduce the heat and simmer for 15 mins.
puree to desired consistency.
